This function would be great if a pay increase history was more visible on the employees record

Update - If you head to an employees profile, within the 'Team' area, within 'History' you can search on 'Salary' this then presents all salary changes, increases and decreases for further visibility.

Agreed, I also think it would be good to have a function where we can include salary changes/history on a custom report.
